Love me a one-pan bake with plenty of nourishing ingredients! Anything I can prep ahead of time, put in the oven and walk away from is my kind of meal!
The other major pro of one-pan bakes is the option to make replacements with what you have on hand or anything you need to meet your nourishment needs.
So let’s get to the ingredients. I stuck pretty close to Trader Joe’s recipe, but I’m also listing some replacements:
1 package TJ’s 10 Minute Farro, cooked according to package instructions
Feel free to supplement with quinoa, millet, or rice for gluten free options (and cook according to package instructions)
Option to use/purchase Veggie or Chicken Stock to boil grain of choice
1 package Pre-Cooked Chicken Sausage
I replaced with TJ’s Chicken Meatballs which worked out just as yummy
2 tablespoons Salted Butter
1 Yellow Onion, diced
3 cloves Garlic, chopped
3 Apples, chopped
I only had one apple on hand, so I added 2 pears which created a yummy combo
Olive Oil (to drizzle onto veggies)
Sea Salt, to taste
TJ’s Garlic Onion Salt is delicious on this as well
Boil water (or Veggie/Chicken Stock) in a large pot.
Cook grain according to package instructions.
As oven preheats, and grain boils, begin to chop up veggies and optional fresh herbs (option to chop veggies and optional herbs ahead of time and store in fridge prior to making meal).
Toss veggies in some olive oil and seasoning.
Toss dressed veggies onto lined baking tray.
Toss chicken sausage/meatballs onto lined baking tray (depending on how much room you have on the tray, you can separate the meat and veggies or place meat on top of veggies).
Bake for 25-35 minutes (depending on how crisp/cooked you like your veggies).
Once grain is cooked, toss in butter and fresh herbs. Take off of heat, but keep lid on to keep grain warm.
Mix meat and veggie mixture into grain mixture once cooked. Top with parmesan cheese if desired.
